Healthy Chocolate Chip Cookies (#1 & #2)

Recipe #1
Mix together:
1 c. natural peanut butter (creamy or chunky) OR butter
3/4 c. applesauce, unsweetened
2-3 c. sucanat
4 eggs
2 tsp. vanilla
Add:
3 c. whole wheat flour
1/2 c. milled flax seeds
1 1/2 tsp. baking powder
1/2 tsp. baking soda
Mix well and add:
3 c. oatmeal
2-3 c. chocolate chips
Drop by spoonfuls onto baking stone; bake at 375 degrees for 10-12 minutes.  Cool on wire rack.  
These cookies do not flatten out much during baking, so if you want a flatter cookie, flatten with a spoon prior to baking.

Recipe #2
1 c. natural peanut butter OR butter
1/2 c. applesauce, unsweetened
2 c. sucanat
1 1/2 c garbonzo beans (chickpeas), minced in a food processor
4 eggs
2 tsp. vanilla
Add:
4 c. whole wheat flour
2 tsp. baking soda
1/2 tsp. salt
Mix well and add:
1 c. oatmeal
2-3 c. chocolate chips
Drop by spoonful onto baking stone; bake at 350 degrees for 11-13 minutes.  Cool on wire rack.
