Baked Oatmeal

Mix together in a 2 qt. baking dish:
1/4 c. melted butter
1 c. + 2 Tbsp. milk
3/4 c. sucanant (or brown sugar)
1 1/2 tsp. vanilla
1 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg (optional)
1/4 tsp. salt
2 eggs
Add:
3 c. oatmeal (regular or quick)
Stir well and refridgerate overnight.
Bake at 350 degrees for 35-45 minutes or until set in the middle.
Serve warm with milk and toppings (if desired)

craisins
chopped nuts
chocolate chips
coconut
dried fruit
