Apple Crisp

I really like freshly made apple crisp -- right out of the oven!  I have found that any leftovers tend to loose their "crispness"  which defeats the purpose of Apple "Crisp".  So, I've come up with this fast and easy apple crisp recipe and only make what we will eat in one day.

Cut 2-3 apples into bite-sized pieces (I leave the peal on -- more fiber and easier!)
Place in a 9 inch pie pan or in a 1 1/2 qt. baking dish.
Sprinkle with cinnamon
Pour 1/4 c. water over apples
Melt 2-3 Tbsp. butter in a glass bowl or liquid measuring cup
Add to melted butter:
1/2 c. sucanant (sugar/brown sugar)
1/2 c. whole wheat flour
1/2-3/4 c. oatmeal
Slivered almonds (optional)
Spread on top of apples
Bake at 350 degrees for 30+ minutes or until apples are tender
Serve warm; top with whipped cream, ice cream or carmel sauce if desired.
